A few years back I spent the better part of a Super Bowl Sunday trying to perfect this fresh guacamole recipe. It’s pretty freaking good.
If you’re feeling really committed, you can run down to the Vallarta-Mart and get a molcajete (they also sell these suckers at W/S and C&B with a heftier price-tag – we just picked one up at long last, but we’re still working on seasoning it, so today’s batch of good ‘ol SoCal Guac will be more a part of a process than actually getting to reap the benefits of having a fully seasoned volcano bowl.)
[You’ll notice I don’t have a recipes category on this blog. Despite the recent influx of kitchen-related posts, I’m no cook. I’m useful in the kitchen only so long as what I’m working on is singularly focused, baked goods…chilis…and I can mix a good bowl of Guac.]…A word of advice – look out for those Serrano chilies both during prep and consumption…they’re pretty mean. (Seriously, when you chop them they can mist out an insane chili-mist, and DO NOT touch your face when handling them.)
If you’re like me and care more about the commercials than the game, here’s a great way to kill time during those pesky quarters.

Ingredients: (I approximate all of these things.)
1 ripe tomato, finely chopped
2 Tbs. finely minced white onion
3 serrano chilies, finely chopped (…maybe start with half of one and work your way up.)
1/2 tsp. sea salt, plus more as needed
3 large avocados, preferably Haas
2 Tbs. finely minced fresh cilantro
For the garnish:
1 Tbs. small fresh cilantro leaves (delicious, and recommended.)
1 Tbs. finely chopped white onion (optional)
1 Tbs. finely chopped ripe tomato (optional)
Directions:
To make the guacamole, put the tomato, onion, chilies and the 1/2 tsp. salt in a mortar or small bowl, and smash around with a pestle or fork. Cut the avocados in half, remove the pits and scoop the flesh into the tomato mixture. Add the minced cilantro and mix and mash, leaving some lumps. Taste and adjust the seasonings with lime and salt. Eat.
